Roasted Zucchini Platter
This delicious Zucchini Platter, can be made to share, as side dish, Appetizer or even as a one person dinner. The latter was the case for me. I’ve started a gut spring cleaning, so to say. Helping my body detox while supporting my digestion and gut health with healthy food including enough Fiber, minerals and vitamins, good fats and protein.
Here you have organic zucchini, which I slowly roasted in a pan, some arugula to add a bitter, peppery taste, which helps digestion, feta cheese crumbles as a protein, and sesame and pumpkin seeds as healthy fats, a drizzle of lemon juice, and of course some olive oil.
A quick and easy dish with lots of taste and all you need.
